  1. Mix the flour, baking powder, sugar, and salt in a bowl. Whisk the egg yolks, milk, and canola oil in a different bowl. Just until moistened, stir the wet ingredients into the dry ingredients.
  2.  Beat the egg whites in a small bowl with a hand mixer fitted with clean beaters until stiff peaks form. Just until there are no more white streaks in the batter, gently fold the egg whites into it. You risk knocking out too much air if you overdo it.
  3.  It is now time to use your finest waffle maker. Preheat it well so that the batter hits the pan and the waffles start to crisp. As directed by the manufacturer, bake the waffles in the waffle maker.
  4.  In a saucepan, combine the sugar, corn syrup, and water to make the cinnamon cream syrup while the waffles are baking. Over medium heat, bring the mixture to a boil.
