Ingredients
Streusel topping:
- Two-thirds cup of flour
- Half a cup of brown sugar
- One teaspoon of cinnamon
- Four tablespoons of softened butter
Coffee
cake batter:
- 1 3/4 cups of flour
- One teaspoon of baking powder
- Half a teaspoon of baking soda
- Six tablespoons of butter and half a teaspoon of salt
- One-third cup of sugar
- One-fourth cup brown sugar
- One egg
- One teaspoon of vanilla
- 3/4 cup buttermilk
Apple
filling:
- Half a cup of brown sugar
- 1 1/2 teaspoons cinnamon and 1 1/2 tablespoons flour
- 1 1/2 cups of apples, diced
Instructions to Make Apple Streusel Coffee Cake
- Preheat the oven to 350°F. Grease or line a square baking pan that is 8 by 8 or 9 by 9 inches with parchment paper and set aside.
Prepare
the streusel topping:
- Mix the flour, brown sugar, and cinnamon in a small bowl.
- With a fork, cut the softened butter into the dry ingredients until the mixture starts to clump together; set aside.
Prepare
the batter:
- In a bowl, combine the flour, baking soda, baking powder, and salt; stir and set aside.
- In a large mixing bowl or the bowl of a stand mixer, combine the sugars and butter.
- For a few minutes, or until light and fluffy, cream the butter and sugars together.
- Stir thoroughly, scraping down the sides at least once, and add the egg and vanilla.
- Mix to combine after adding roughly half of the dry ingredients.
- Scrape down the sides of the bowl and keep mixing as you gradually add the buttermilk.
- Stir just until incorporated after adding the remaining dry ingredients.
Prepare
the apple filling:
- In a bowl, mix together the flour, cinnamon, and brown sugar.
- Stir in the diced and peeled apples until thoroughly mixed, then set aside.
Assemble
and bake:
- A little over half of the batter should be poured into the prepared pan and spread evenly.
- Over the batter, sprinkle the apples.
- Evenly distribute the remaining batter over the apples using a spoon.
- Place the streusel topping on top and gently press it into the batter.
- If you stick a toothpick in the middle, it should come out with only a few moist crumbs, not runny batter, after about 30 minutes of baking.
- Allow to cool, then slice and savor!

There is only one bowl needed for
this Apple Streusel Coffee Cake. Without having to deal with wet and dry
ingredients separately, you can combine all the cake ingredients at once! The
separate streusel topping is incredibly delicious. Do not, in any way, skip it!

Ingredients
For the cake:
- Two cups of all-purpose flour
- One cup of granulated sugar
- Half a cup of plain, whole Greek yogurt
- Half a cup of melted salted butter and 1/4 cup of whole milk
- Two large eggs
- One teaspoon of cinnamon powder
- One teaspoon of baking powder
- One teaspoon of baking soda
- One teaspoon of vanilla
- 1/4 teaspoon of table salt
- Peel and chop three large granny smith apples into small pieces.
Streusel topping:
- Eight tablespoons of cold, diced salted butter
- ½ cup of tightly packed light brown sugar
- One cup of all-purpose flour
- Two teaspoons of ground cinnamon
- One cup of chopped, toasted pecans
Drizzle
(optional):
- One cup of powdered sugar
- Depending on the desired thickness, use approximately two tablespoons of milk.
Instructions to Make One Bowl Apple Streusel Coffee Cake
- Prepare the topping in advance by combining all the ingredients in a large bowl, excluding the pecans. Work the mixture into the consistency of wet sand with your fingers. Work the pecans. Keep covered and chilly.
- Preheat the oven to 350 degrees Fahrenheit, place the rack in the lower middle position, and butter a 13 x 9-inch baking pan.
- In the bowl of a stand mixer, combine all the cake ingredients, excluding the apples. Just until the mixture is combined, use the paddle attachment to mix at a medium speed while pausing occasionally to scrape. Avoid mixing too much.
- Fold in apples with a rubber spatula. The batter will be dense. Even out the top and corners of the batter after spreading it into the baking pan. Evenly distribute the streusel topping.
- A toothpick inserted in the center of the cake should come out with a few tiny, soft crumbs attached after 40 to 50 minutes of baking. Avoid overbaking. (Use foil to cover loosely if the topping browns too quickly while baking.) Allow cake to cool fully before slicing.
- If desired, create a drizzle by whisking together milk and powdered sugar. To get the desired consistency, add extra milk or powdered sugar as necessary. Pour over the chilled cake.
