This tart, which has a lemon cream cheese base, jammy blueberries, and a crunchy crumble, is perfect. Using puff pastry makes things simple. The bottom of the tart will crisp up if the baking sheet is preheated in the oven. Take care when you slide the assembled tart onto the hot pan!

Cream cheese layer:

  • Four ounces of softened cream cheese
  • 1/4 cup of  confectioners' sugar
  • Zest and juice from half a lemon

 

Blueberry layer:

  • Two cups of fresh blueberries
  • Two tablespoons of granulated sugar
  • Juice of half lemon

 

Crumble and assembly:

  • Two tablespoons of granulated sugar
  • Zest of half lemon
  • Half a cup of all-purpose flour
  • Four tablespoons (1/2 stick) melted unsalted butter
  • One sheet of thawed frozen puff pastry

 

Directions to Make Lemon Blueberry Puff Pastry Tart


To make cream cheese layer:

  • Turn the oven on to 400°. Preheat a baking sheet in the oven.
  • Using a rubber spatula, combine the cream cheese, confectioners' sugar, lemon juice, and lemon zest in a medium-sized bowl.

 

Blueberry layer:

  • Add the blueberries, lemon juice, and granulated sugar to another medium bowl.

 

Crumble and assembly:

  • In another medium bowl, use your fingers to rub the lemon zest and granulated sugar until fragrant, then stir in the flour. Add butter and stir until combined.
  • Roll out the pastry to a 12" x 9" rectangle on a sheet of parchment. To make a border, fold in sides about 1/4" all the way around.
  • In the middle of the pastry, spread a layer of cream cheese all the way to the edge. Over cream cheese, spoon the blueberry layer. Sprinkle crumble over. Gently place the parchment onto the heated sheet.
  • Bake the tart for 20 to 25 minutes, or until the blueberries are bursting and the pastry is golden brown and puffy. Before slicing, let cool for ten minutes.
