Cook time: 45 minutes

Yield: 2 loaves (12 pieces each)

Ingredients to Make Gluten Free Banana Bread

  • Two cups of all-purpose baking flour without gluten (without xanthan gum)
  • One teaspoon of baking soda
  • Four large eggs at room temperature with 1/4 teaspoon salt
  • Two cups of ripe bananas (4-5 medium) mashed
  • One cup of sugar
  • Half a cup of applesauce without sugar
  • One-third cup of canola oil
  • One teaspoon of vanilla extract
  • Half a cup of chopped walnuts

Directions to Make Gluten Free Banana Bread

  • Set the oven's temperature to 350°F. Combine the flour, baking soda, and salt in a large bowl and whisk to combine.
  • Whisk the eggs, bananas, sugar, applesauce, oil, and vanilla in a small bowl. Just until moistened, stir the wet ingredients into the dry ingredients.
  • Fill two 8 x 4-inch loaf pans with the batter after greasing them. Sprinkle the walnuts on top of each.
  • Bake for 45 to 55 minutes, or until a toothpick inserted in the center comes out clean. Give the loaves ten minutes to cool in their pans. After taking the loaves out of the pans, place them on wire racks. Allow them to reach room temperature.

Gluten Free Banana Bread Variations

Add additional mix-ins: With chocolate chips, cranberries, pumpkin seeds, pecans, or a mixture of warm spices, you can personalize this gluten-free banana bread recipe.

Add another extract: Although we adore the subtle vanilla flavor of this recipe, almond extract would also be excellent.

Bake mini loaves: The batter can be baked into four 5-3/4×3-inch mini loaf pans if you want to bake a large number of mini loaves to distribute to friends and family. Remember that the mini loaves won't require as much baking time as the regular loaf.
