Made with a cinnamon batter and dusted with cinnamon sugar, these quick and simple breakfast pancakes are modeled after snickerdoodle cookies. The buttermilk mixture can also be prepared in a liquid measuring cup. For each pancake, you can use up to 1/2 cup of batter.

Batter:

 

  • One cup of all-purpose flour
  • Two tablespoons of brown sugar
  • Two teaspoons of ground cinnamon
  • One teaspoon of cream of tartar
  • One teaspoon of baking powder
  • Half a teaspoon of baking soda
  • Half a teaspoon of sea salt
  • One cup of buttermilk
  • One egg
  • Two tablespoons of melted butter
  • One teaspoon of vanilla extract

 

Topping:

 

  • 1/4 cup of white sugar
  • One teaspoon of ground cinnamon
  • Five tablespoons of melted butter
  • An optional 7-ounce can of whipped cream

  • In a bowl, whisk together flour, brown sugar, cream of tartar, baking powder, baking soda, salt, and 2 teaspoons cinnamon.
  • In a small bowl, mix together buttermilk, egg, butter, and vanilla extract. Break up the egg with a beat. After adding the flour mixture, stir the batter until it is just combined and foamy.
  • In a small bowl, whisk together 1 teaspoon cinnamon and white sugar.
  • A large nonstick griddle should be heated to medium-low heat. Transfer one-third of the batter to the griddle and cook for three to four minutes, or until bubbles appear and the edges are dry. Cook for 2 to 3 minutes after flipping, or until browned on the other side. Continue with the remaining batter.
  • Lightly coat pancakes with the five tablespoons of butter. Add one teaspoon of the cinnamon-sugar mixture to each. Put whipped cream on top.
