Ingredients

  • 3/4 cup of oat milk
  • Half a cup of strong-brewed coffee
  • 3 tablespoons of toasted cinnamon syrup
  • 1/4 teaspoon xanthan gum (cornstarch can be used in its place, but use a bit more)
  • One cup of ice 
  • Nondairy whipped cream (you can substitute regular whipped cream if you'd rather)

Toasted cinnamon syrup:

  • Two cinnamon sticks
  • One cup of water
  • Half a cup of packed light brown sugar
  • Half a cup of granulated sugar

Cinnamon crumble topping:

  • One vanilla cookie, such as a Nilla Wafer or Golden Oreo, crushed 
  • ⅛ teaspoon of ground cinnamon

  • In a blender, combine the oat milk, coffee, xanthan gum, toasted cinnamon syrup, and ice; process until smooth and frothy.
  • Transfer to a cup and top with cinnamon crumble topping and whipped cream.

Toasted Cinnamon Syrup:

  • Place cinnamon sticks in a dry cast iron skillet over medium heat (you can also use stainless steel or any nonstick skillet).
  • Use tongs to turn the cinnamon sticks occasionally to ensure even toasting, and let them toast for approximately three to five minutes. As they begin to darken and become fragrant, let them toast.
  • Place the cinnamon sticks, water, and both types of sugar in a medium saucepan and bring mixture to a boil.
  • Once boiling, reduce heat and simmer until syrup thickens, about 10 minutes (keep in mind that it will thicken more as it cools).
  • Take off the heat and strain the cinnamon sticks from the syrup into a mason jar or heatproof bowl. Before using, let the bowl or jar cool fully in the refrigerator. For up to a month, syrup can be kept in the refrigerator in an airtight container.
